Torn between tradition and modernism, by the cultural and culinary influences of Comminges, Christian and Thierry PONSOLE write the history of this family house founded in 1955.
Specialities: regency sweetbread puff pastry; cassoulet with Tarbais beans; daube commingeoise, Russian cake. Between the Garonne and the Pyrenees, the countryside and the mountains, each season brings its own emotions. The chef's cuisine, inspired by the finest traditions, includes typical regional dishes such as duck foie gras cooked in a terrine or Comminge cassoulet, as well as more unusual recipes such as Russian cake with wild violet ice cream. All to be savoured in the cosy, elegant decor of the restaurant. A fine wine list to match.
