Daily processing using our indigenous ferments, traditional ladle-moulding, fresh products, lactic pastes and pressed tomes. Absolute respect for the natural cycles of our animals: mating at dawn in autumn, drying off before winter, calving in February/March, kids treated with dignity, raised within the herd under their own mothers, suckling at will well beyond the minimum necessary. Then, to feed such a family of horned goats, we work the land and harvest the fodder from their menu... homemade manure as the main ingredient, meadows guaranteed free from
