Les Fromagers du Mont Royal has been a family business for 4 generations. Its director, Dominique Bouchait, who was voted Meilleur Ouvrier de France in 2011, continues to build on his expertise in maturing and creating cheeses. Two of his employees have been awarded the "Lyre d'or", a prize that rewards the creation of a cheese platter based on the following criteria: mastery of professional gestures, choice and quality of products, as well as the aesthetic appeal of the composition.
Their star cheese is Napoléon Commingeois, a soft-hearted Pyrenean. Even old tradition dictates that this ewe's milk cheese is always rich in suppleness. It owes its name to the mountain opposite the cellars, "Penne - Haute", nicknamed "Nez de Napoléon" because of its shape. You'll find their other specialities, Régalis (sheep's milk blue cheese, very lightly salted and very soft), Cornu des Pyrénées (mixed ewe's and cow's milk), Baraillan (ewe's milk), Pipoune and many others on the open-air markets or in their shop in the shopping arcade at the Pole Leclerc in St-Gaudens.
